Preheat oven to 400°F (200°C). Halve squash lengthwise, scoop seeds, rub cut side with oil and salt, and roast cut-side down 40–45 minutes until strands separate easily with a fork.

Meanwhile, brown beef and pork in a heavy pot over medium-high heat until deeply caramelized, about 10 minutes. Drain excess fat if needed.

Add onion and cook 6 minutes until soft. Stir in garlic and tomato paste; cook 2 minutes until brick-red.

Deglaze with wine (or 1/4 cup broth). Add crushed tomatoes and Italian herbs. Reduce heat and simmer, uncovered, 45–60 minutes.
